Minced Chicken Noodles

This is one of my Mister’s favourite dishes and I reckon my Pops will love it too. It makes a quick, yummy one-dish meal, ideal for a quick, weekend lunch or even dinner. Also a nice dish for that Summer afternoon at the beach.

I find that this is also a dish suitable for young kids as it is not spicy at all. Of course for those who would prefer it spicy, alterations can be made to the amount of pepper  and chilli flakes used. A very versatile one dish meal, which is super easy to prepare! (as always!)

  1. 1 pack fresh Wanton Noodles (Boiled for one minute and run under cold water rapidly)
  2. 500 grams chicken breast (Ready minced chicken is also fine to use)
  3. 1 teaspoon minced garlic
  4. 1 teaspoon minced ginger
  5. 3 stalks spring onion
  6. ½ teaspoon salt
  7. ½ teaspoon pepper
  8. A dash of light soya sauce
  9. 3 stalks Kailan (Chinese Broccoli)
For the Garlic oil
  1. ¾ cup sunflower oil
  2. 8 Cloves Garlic (chopped)
  3. 1 teaspoon dried Chilli Flakes
  4. Salt to taste
Garlic Oil
  1. Heat the sunflower oil, and when it’s warm enough, add in the fresh chopped garlic.
  2. Fry till fragrant and add in the dried chilli flakes and salt.
  3. Remove from heat and leave to cool.
For the minced Chicken
  1. In a separate pan, fry minced garlic and ginger till fragrant, add in minced chicken.
  2. Fry till close to dry, add in all other ingredients.
  3. Leave to fry till almost dry and close to crispy.
  4. Blanch the Kailan in hot water for just under 1 minute.
  5. Place Wanton Noodles on a plate, top up with the minced chicken.
  6. Place the Kailan on the side.
  7. Drizzle the garlic oil over generously.
  1. Be generous with the oil as the flavor of the noodles depend on the garlic oil and the minced chicken.
  2. It is important to follow the instructions as on the noodles packet, so as to achieve the right texture of noodles.
