Spicy Thai Glass Noodle Salad (Yum Woon Sen)

A refreshing Thai style salad, perfect for a main meal, especially on those warm days, or as a side to share.

Ingredients

  • 2 tbsp Sunflower Oil For a Healthier option
  • 1 tsp Sesame Oil
  • 3 garlic cloves finely chopped
  • 4 Thai chilies thinly sliced
  • 2 shallots thinly sliced
  • 2 bundles Glass Noodles
  • 2 to matoes diced
  • 1 medium Cucumber
  • 10 stalks string beans cut into 3cm length
  • 1 cup fresh roughly chopped cilantro
  • 1 cup fresh mint
  • 1/2 cup ground peanuts
  • 1-2 tbsp light soy sauce
  • 2 tsp raw sugar
  • juice from 3 limes

Instructions

  • Soak glass noodles in boiling hot water (covered) for 5 mins or follow package instructions.
  • Check after 5 minutes to ensure the noodles are not soggy.
  • If noodles need a longer time, leave to soak till final stringy but NOT soggy consistency is achieved.
  • Drain and place in salad bowl.
  • For the dressing, mix Sunflower Oil, Sesame Oil, finely chopped Garlic, Soy Sauce, Raw Sugar and lime Juice together in a bowl and stir well.
  • Once noodles has cooled, add in all other ingredients into salad bowl.
  • Pour dressing over.
  • Ready to serve.

Notes

Due to food allergies, I have omitted Fish Sauce, however, 1 Tbsp of Fish Sauce can be included, if desired.
The type of vegetable use in the salad can be varied according to individual preference.
