It was a long overdue date – cook date to be more exact! Each time I’m at different parts of the world and through the many, uncountable conversations we’ve had, I’ve always told this dear ‘Halo-sister’ 🙂 of mine that some day we shall have a great cook-out! And before we knew it, days turned into weeks, into months and eventually years (like duh!) till this December – a memorable, wonderful December so far indeed!

One thing I’ve always promised my ‘Halo-sister'(also known as Maya) who also owns the fabulously delicious Maya-Kitchenette blog at www.maya-kitchenette.com is that I will make her a big salad! Ahakz! Seeing as to how I’m always making salad (I can’t live without my veggies!), regardless at which part of the world I’m in!

Maya and I never fail to talk about our daily meals in our virtual conversations, regardless of my geographical location. It all started like this……

Every time she asks me, “What’s cooking today Beaaaaa?”

My reply would be, ” Salad and maybe some fish…..still thinking…”

And then on subsequent days, my replies would be, ” Salad and Chicken…” or “Salad and meat….”

As you can see the common dish that remains would be the SALAD! And this definitely sparked off that salad mission that I had for her! Well all I can say as I’m typing this is: “SALAD MISSION ACCOMPLISHED! Weeheeeee!”

Well, at least I won’t be leaving and be saying to her yet again on our virtual chats that I wished I had time to accomplish that salad mission 🙂 I am happy I’ve managed to share some salad love! Of course, the big cookout wasn’t just made of Salad! The ever talented Maya also prepared CousCous and Creamy Meatballs Gravy in advanced, just so that we didn’t starve while cooking! Too kind Maya! 

And the other dish we prepared (more of Maya actually!) was Baked Chicken Orzo! Oh well, I did my part, I bought the Orzo hey! 😉  Lol! All in all, it was time well spent at our BIG cookout of Baked Chicken Orzo, Bea’s Avocado-Snow Pea Salad and Brown Sugar Custard (courtesy of Maya – thank you!) Bea’s Avocado Snow Pea Salad all ready to be ‘dressed’

Bea's Avocado Snow Pea Salad

A refreshing salad with a tangy twist of flavours
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients

  • 1 bag mixed baby salad leaves
  • Half box Grape Tomatoes halved
  • 1 Avocado sliced
  • 150 grams Snow Peas Remove side strips, cut into 1cm lengths
  • 1/2 small onion thinly sliced

For the dressing

  • Juice of half lemon
  • 3 tablespoons extra virgin Olive Oil
  • 150 ml light SoySauce
  • 1 tablespoon Agave Syrup / Maple Syrup/ Honey
  • 1 small chilli thinly sliced

Instructions

  • Wash salad leaves, drain to dry and arrange in a salad bowl.
  • Add in all other ingredients
  • Pour dressing when serving

Notes

Ensure dressing is properly mixed. If using honey in place of Agave Syrup or Maple Syrup, give the dressing a bit of a stir to blend in honey to the dressing mixture.
