Hello there!!! Nothing much has changed here, it’s still warm, very warm, HOT and of course, it’s still Summer! Oh well, I shall not complaint, at least I get to go out without the need to layer up! (Bea tryinna look on the brighter side 🙂 ) Well… I’ve actually been staying indoors with the AC on. In fact, I have been leaving the AC on in the room, just so at the end of the day, I have somewhere like a cool zone for me to return to – Bea’s personal cool box! 😉
Well, oh well, one good thing about Summer is that it allows me to explore into various options in preparing my meals. Remember the “too-hot-to-even-eat-anything-days” I mentioned in one of my previous entries??? On days like these, sometimes, I just let my Bea-Brain do the works of just creating something, just like what I did with this Rocket Medley Summer Salad with Beans and Red Radish recipe.
It is a super easy recipe, takes about 15minutes to prepare and in terms of the taste, it is so super refreshing that it really picks you up from that Summer ‘too-hot-to-even-eat-anything” mode back to just Summer mode. Ahhhhhh… I cannot stress on how much I love Red Radish, not only for its colour and refreshing taste. Red Radish is also known to be good for your body due to its ability to eliminate toxins from the body, aids in digestion and contains really low calories. Red Radish also have a hydrating and cooling effect on the body (perfect for Summer) and also it is one of those vegetables that is believed to offer some form of protection against Cancer???
So if you’re looking for something to clean that system out, GO Red Radish! Wouldn’t the above be enough reasons to let us start loving Red Radish? So, Gooooo Red Radish, Go,GO, GOOOOO!
Rocket Medley Summer Salad with Beans and Red Radish
- 1 packet Rocket Medley washed
- 5 Red Radish diced
- 1 Avocado sliced
- A bunch of String beans washed and cut to 1.5cm length
- Freshly ground pepper to taste
- Freshly ground Rock salt to taste
- Lemon juice to taste
- Drizzle of Extra Virgin Olive Oil
- Combine all washed vegetables in a bowl.
- Add in pepper, rock salt, lemon juice and EVOO based on personal preference.
- Ready to serve.
